The camera on the iPhone is slow scanning and does not expose all the pixels at once but rather one row at a time before moving onto the next. Different rows of the image are captured at different times and during this period the blades have moved. There are better examples out there (with floating props that are not even attached to the plane), but this is the best I could get.

You wouldn't want to look out of your cockpit and see that! Really fascinating explanation, I've got to try something like this out now.
