They shouldn't unless the date is replaced with the time on the phone you are adding the SIM card to when you ad the SIM card. It depends on how the software was written but I think for legal reasons it is not supposed to change.
Can texts on old sim cards change the date they was sent when you put the sim card in a new phone?
