If you wish (or need) to have a GUI for any Linux server you can. I run Ubuntu 12.04 LTS with an X-Window GUI, I use gnome, but there are several others. The real question is "Why do you need a GUI for a server?" I have a GUI because I also use this machine as a desktop sometimes, if it was just a server, I wouldn't bother - why load a server with more work to do?
