I haven't seen Giratina in Pixelmon but there are some legendary pokemons in Pixelmon. These are the ones I have seen with my own eyes:

(Articuno) Snowymountains

(Moltres) Extremehills, Zaptos:
ForestHills

(Mew) Jungle

(Mewtwo) Plains

Andy is right, Giratina is not in Pixelmon.

However here you can find a list of all the Pokémon available at the moment in Pixelmon. As you can see, it is quite a long list with many good Pokémon but many users now are requiring to add other ones like Palkia, Dialga, Gardevoir, Arceus, Kyurem, Reshiram. Zekrom and of course, Giratina.

I think that seeing that the requests are pretty high, you will be seeing those addition pretty soon in the next update.

In the meantime, as Any said, there is plenty of other Pokémon you can play with while waiting for Giratina to come up. Hope this helps!
