I remember going into a computer store and needing a cat5 cable that was longer than what I had. I've seen others too, but I only remember the cat6 next to the cat5. What's the cat6 one for? Is that the dsl one?

Cat5 = 10 to 100 Mbps

Cat5e = 1000Mbps (plus less interference within the cable itself)

Cat 6 = 10Gbps (plus even less interference than Cat5e)

For household use the cat5e would be all you might ever need at this stage. The real difference is what Walt said, they are interchangeable, as they use the same RJ45 connector, it just depends on how much data you want to move and how fast.
